Pi Lo Chun (Bi Luo Chun) is one of China's tea famous teas. It is grown in the imperial tea gardens of Dong Ting Mountain, a mountain in southern Jiangsu Province. There, the tender tea leaves sprout amidst peach, plum and apricot blossoms.
The shoots are picked while still small, less than 2cm. long and then are pan-fired in several steps in order to remove the oxidizing enzyme, twist the leaves and bring out their natural fine down.
Its white downy sprouts, each individually hand-twisted, brews a mildly sweet light yellow liquor, with a creaminess and fruitiness that is unique only to this tea.
Pi Lo Chun translates as 'green snail spring', a reference to this tea's distinctive spiral-shaped leaves.
Can be paired with grilled poultry, seafood, dry fruit, vanilla or coconut desserts.
Water Temperature: 175°, or when very small bubbles appear on the water's edge.
Brewing Instructions: Use 1 tablespoon (double for a medium sized pot). Rinse tea for 1 second. Discard rinse water. Steep for 1 minute. May be infused multiple times.
